Mango Lassi Yogurt Pops with Cardamom

Ingredients

  • 1 whole330 gMangopeeled and cut into chunks, divided
  • ¾ cup200 gPlain yogurt, low-fat
  • 3½ oz100 gPlain Greek yogurt, nonfat
  • 1½ tbsp30 gHoney
  • 2 tsp10 gLime juice
  • ½ tsp1 gGround cardamom
  • 2 tbsp16 gPumpkin seeds (pepitas)finely chopped

Steps

  1. Set out 4 large ice-pop molds (or 6 smaller ones) and sticks. Cut the mango into chunks and set aside one quarter of it; finely dice that quarter.
  2. Put the remaining three quarters of the mango in a blender with the plain yogurt, Greek yogurt, honey, lime juice and cardamom. Blend until completely smooth, about 1 minute.
  3. Stir the diced mango into the blended mixture by hand so the pops have small pieces of fruit.
  4. Sprinkle the chopped pumpkin seeds into the bottoms of the molds, then pour in the mango yogurt mixture, leaving a little space at the top for expansion.
  5. Tap the molds on the counter to release air bubbles, cover and insert the sticks.
  6. Freeze until solid, at least 6 hours.
  7. To unmold, run the outside of the molds under warm water for 10 to 20 seconds and pull the pops out gently. Serve right away.
