- 1 tsp1 gDried thyme
- ½ tsp1 gBlack pepper

Steps
- Prep first: chop the onion, mince the garlic, chop the kale, parsley and mint, zest the lemon before juicing it, and pat the chickpeas dry.
- Combine the vegetable broth and water in a saucepan and keep it warm over low heat.
- Heat half the olive oil in a Dutch oven over medium-high heat. Add the chickpeas and cook, stirring now and then, until golden in spots, about 6 minutes. Transfer to a plate.
- Lower the heat to medium and add the remaining half of the olive oil. Add the onion and cook until soft, about 5 minutes, then stir in the garlic and thyme for 1 minute.
- Add the rice and stir until the edges look translucent, about 2 minutes.
- Add the warm broth mixture a ladle at a time, stirring often and letting each addition absorb before the next, for about 18 minutes, until the rice is creamy and just tender.
- Stir in the kale with the last ladle of broth mixture and cook until wilted, about 3 minutes.
- Off the heat, stir in the chickpeas, butter, Parmesan, lemon zest, lemon juice, salt and black pepper.
- Fold in the parsley and mint, loosen with a splash of hot water if needed, and serve right away.
