Steps
- Heat the oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
- Warm the olive oil and the garlic in a small skillet over low heat for 2 to 3 minutes, just until fragrant and not browned. Pour into a large bowl and let cool for 5 minutes.
- In a medium bowl, whisk the flour, baking powder, baking soda, salt, black pepper and thyme.
- Into the bowl with the garlic oil, whisk the eggs, then the milk and the ricotta until smooth.
- Stir the parsley, dill and green onion into the wet mixture, then add 35 g (about 70%) of the parmesan.
- Add the flour mixture to the wet mixture and fold gently with a spatula until just combined; a few lumps are fine.
- Divide the batter evenly among the 12 muffin cups and sprinkle the remaining 15 g of parmesan over the tops.
- Bake 20 to 23 minutes, until the tops are golden and a toothpick in the center comes out clean.
- Cool in the pan 5 minutes, then move the muffins to a rack and cool at least 10 minutes more before serving.
