- ½ cup100 gUnsalted buttermelted and cooled
- 1 tsp4 gVanilla extract
- ¾ cup90 gPowdered sugar
Steps
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- Melt the butter and let it cool slightly; finely chop the orange.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk the egg, then whisk in the melted butter, the buttermilk, the vanilla and four-fifths of the orange juice; set the remaining one-fifth of the orange juice aside for the glaze.
- Pour the egg mixture into the flour mixture and stir gently until just combined; a few streaks of flour are fine.
- Fold in the chopped orange with as few strokes as possible.
- Divide the batter evenly among the muffin cups.
- Bake 18 to 22 minutes, until the tops are golden and a toothpick inserted in the center comes out clean.
- Cool the muffins in the tin for 5 minutes, then move them to a rack to cool completely, about 20 minutes.
- Make the glaze: whisk the powdered sugar with the reserved orange juice until smooth and pourable.
- Drizzle the glaze over the cooled muffins and let it set for 5 minutes before serving.
