  • 3 cups450 gFrozen strawberries, unsweetened
  • 2 containers (6 oz)340 gPlain Greek yogurt, nonfatcold
  • 3 tbsp60 gHoney
  • 2 tsp10 gLemon juice
  • 1 tsp4 gVanilla extract
  • ⅔ cup sliced100 gStrawberriessliced

Steps

  1. This soft-serve starts with already-frozen strawberries, so no extra freezing time is needed. Chill four serving bowls in the freezer while you prep.
  2. Slice the fresh strawberries and set them aside for topping.
  3. Add the Greek yogurt, honey, lemon juice and vanilla to the blender first, so the liquids sit near the blades.
  4. Add the frozen strawberries on top of the yogurt mixture.
  5. Blend on low, then high, stopping to scrape down the sides and press the frozen strawberries toward the blades, until thick and smooth, about 1 to 2 minutes.
  6. Scoop the frozen yogurt into the chilled bowls, top with the sliced fresh strawberries and serve right away. For a firmer scoop, freeze in a covered container for 1 to 2 hours.
