- ⅔ cup160 gUnsweetened applesauce
- ½ cup (120 ml)120 gButtermilk, low-fatroom temperature
- 1½ tsp6 gVanilla extract
- 1 medium200 gApplepeeled and coarsely grated
Steps
- Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin. Melt the butter and let it cool slightly.
- Peel and coarsely grate the apple, then squeeze it lightly to remove excess juice.
- In a bowl, whisk the flour, the baking powder, the baking soda, the salt, the nutmeg and one-third of the cinnamon.
- In a second bowl, whisk two-thirds of the sugar with three-quarters of the melted butter, then whisk in the eggs, the applesauce, the buttermilk and the vanilla until smooth.
- Stir the grated apple into the wet mixture, then fold in the flour mixture just until no dry streaks remain; a few lumps are fine.
- Divide the batter evenly among the muffin cups.
- Bake 18 to 20 minutes, until the tops spring back and a toothpick in the center comes out clean.
- While the muffins bake, make the topping: stir the remaining one-third of the sugar with the remaining two-thirds of the cinnamon in a small shallow bowl.
- Cool the muffins in the tin for 5 minutes, then lift them out. Brush each top with the remaining one-quarter of the melted butter and dip it in the cinnamon sugar.
- Cool on a rack for at least 10 minutes before serving.
