Cheddar Whole Grain Hot Dog Buns

Ingredients

  • 3⅓ cups420 gAll-purpose flour
  • 1 cup120 gWhole wheat flour
  • ¼ cup30 gYellow cornmeal, whole-grain
  • 1 cup (240 ml)240 gMilk, 2%warmed to about 100°F (38°C)
  • ½ cup110 gWaterwarmed to about 100°F (38°C)
  • 1 large50 gEggsbeaten
  • 3 tbsp40 gUnsalted buttermelted and cooled
  • 2 tbsp25 gGranulated sugar
  • 1 packet7 gInstant yeast
  • 1½ tsp9 gSalt
  • 1½ cups shredded170 gCheddar cheesesharp, shredded
  • 2 tsp10 gYellow mustard

Steps

  1. Divide the cheddar: set aside 130 g for the dough and 40 g for the tops.
  2. In a large bowl, whisk the all-purpose flour, whole wheat flour, cornmeal, sugar, instant yeast and salt to make the dry mix.
  3. Stir the warm milk, warm water, melted butter, beaten egg and mustard into the dry mix until a shaggy dough forms. This is about 64% hydration (milk and water to the combined all-purpose and whole wheat flours) and 1.7% salt.
  4. Knead 8 to 10 minutes by hand or 6 minutes in a mixer until smooth and elastic, then knead in the 130 g portion of cheddar until evenly spread.
  5. Cover and let rise at about 75°F (24°C) for 60 to 75 minutes, until doubled in size.
  6. Line a baking sheet with parchment. Divide the dough into 12 pieces (about 100 g each), roll each into a 6-inch log, and set them in two rows nearly touching so they bake into soft-sided buns.
  7. Cover and proof at about 75°F (24°C) for 40 to 50 minutes, until puffy and the dough springs back slowly when poked. Meanwhile, preheat the oven to 375°F (190°C).
  8. Sprinkle the remaining 40 g of cheddar over the buns.
  9. Bake 18 to 22 minutes, until golden and the center reads 190°F (88°C).
  10. Cool the buns on a rack for at least 30 minutes, then pull apart and split for hot dogs.
