Ingredients
- 1⅔ cups pitted250 gSweet cherrieshalved
- 1 cup200 gGranulated sugar
- 1 tbsp10 gCornstarch
- 2 tsp10 gLemon juice
- 2 cups240 gAll-purpose flour
- 1¾ tsp8 gBaking powder
- ½ tsp2 gBaking soda
- ½ tsp3 gSalt
- 2½ tsp5 gGround cardamom
- 2¼ tsp4 gGround ginger
- ¾ tsp2 gGround cinnamon
- ½ cup115 gUnsalted buttermelted and slightly cooled, plus a little for the pan
- 2 large100 gEggsroom temperature
- ⅔ cup160 gSour creamroom temperature
- 1¼ tsp5 gVanilla extract
Steps
- Make the filling first: in a small pot, combine the cherries, 30 g of the sugar (the rest goes in the batter), the cornstarch and the lemon juice. Cook over medium heat, stirring, for 6 to 8 minutes until thick and glossy. Spread on a plate and cool for 20 minutes.
- Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with a little of the butter and line it with parchment.
- In a bowl, whisk the flour, baking powder, baking soda, salt, cardamom, ground ginger and cinnamon.
- In a large bowl, whisk the remaining sugar with the rest of the melted butter, then whisk in the eggs one at a time, followed by the sour cream and vanilla until smooth.
- Fold the flour mixture into the egg mixture just until no dry streaks remain.
- Spread half of the batter in the pan. Spoon all of the cooled cherry filling over it, leaving a 1/2-inch border, then cover with the remaining half of the batter and smooth the top.
- Bake for 60 to 70 minutes, until a toothpick inserted in the cake part comes out clean; tent with foil after 40 minutes if the top browns fast.
- Cool in the pan on a rack for 15 minutes, lift out by the parchment, and cool completely on the rack, about 1 hour, before cutting into 12 slices.
