  • ½ cup70 gSemisweet chocolate chips
  • 1¼ tsp5 gVanilla extract
  • ¾ tsp2 gGround cinnamon
  • ¾ tsp4 gBaking powder

Steps

  1. Heat the oven to 350°F (175°C). Lightly grease an 8-inch square pan with a dab of the butter and line it with parchment, leaving an overhang.
  2. Spread the walnuts on a small baking sheet and toast in the oven for 6–8 minutes until fragrant; let cool.
  3. In a large bowl, whisk the mashed banana, the almond butter, the brown sugar, the egg, the remaining melted butter and the vanilla until smooth.
  4. In a second bowl, stir together the oats, the whole wheat flour, the cinnamon, the baking powder and the salt.
  5. Fold the oat mixture into the banana mixture until no dry streaks remain.
  6. Set aside about one quarter of the toasted walnuts for the top. Fold the remaining three quarters of the walnuts and the chocolate chips into the batter.
  7. Spread the batter evenly in the pan and scatter the reserved quarter of the walnuts over the top, pressing them in lightly.
  8. Bake for 25–30 minutes, until the edges are golden and a toothpick inserted in the center comes out clean.
  9. Cool in the pan on a rack for at least 30 minutes, then lift out by the parchment and cut into 12 bars.
