- ⅓ cup packed90 gBrown sugarpacked
- ½ cup125 gUnsalted buttermelted and cooled, plus a little extra for the pans
- 2 large100 gEggsroom temperature
- ½ cup (120 ml)120 gButtermilk, low-fatroom temperature
- 2 tsp8 gVanilla extract
- 1¼ tsp6 gBaking soda
- ¾ tsp4 gBaking powder
- ¾ tsp4 gSalt
- ¾ tsp2 gGround cinnamon
- 1 cup170 gSemisweet chocolate chips
- ½ cup (120 ml)130 gHeavy cream
Steps
- Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans with a little of the butter and line the bottoms with parchment.
- In a medium bowl, whisk the flour, baking soda, baking powder, salt and cinnamon.
- In a large bowl, whisk the mashed banana, granulated sugar, brown sugar, the rest of the melted butter, the egg, the buttermilk and the vanilla until smooth.
- Add the flour mixture to the banana mixture and fold gently until no dry streaks remain; do not overmix.
- Divide the batter evenly between the pans, half in each, and smooth the tops.
- Bake 28 to 32 minutes, until golden and a toothpick inserted in the center comes out clean.
- Cool the layers in the pans on a rack for 10 minutes, then turn them out onto the rack and cool completely, about 1 hour.
- For the ganache, heat the heavy cream in a small saucepan until steaming, pour it over the chocolate chips in a bowl, wait 3 minutes, then stir until glossy. Let it thicken for about 15 minutes, until it coats a spoon.
- Set one cake layer on a plate and stack the second layer on top, flat side up.
- Pour the ganache over the top of the cake, spreading it to the edges so it drips down the sides. Let it set for 20 minutes, then cut into 12 slices.
