Steps

  1. Preheat the oven to 375°F (190°C). Brush an 8-inch square baking dish with one third of the melted butter.
  2. Chop the apple into chunks and chop the walnuts before you start mixing.
  3. Make the base: in a large bowl, stir together most of the oats (all but about 1/3 cup), most of the cinnamon (all but 1/2 teaspoon), the nutmeg, baking powder and salt.
  4. In a second bowl, whisk the egg, milk, maple syrup and vanilla until smooth.
  5. Pour the milk mixture over the oat mixture, fold in the apple, and spread it evenly in the baking dish.
  6. Make the topping: in a small bowl, mix the remaining oats, the walnuts, the brown sugar, the remaining cinnamon and the remaining two thirds of the melted butter until crumbly. Scatter it over the oats.
  7. Bake 35 to 40 minutes, until the center is set, the egg custard reaches 160°F (71°C), and the topping is golden and crisp.
  8. Cool 10 minutes, then cut into four squares and serve each with a spoonful of the Greek yogurt.
