  • ¾ tsp4 gBaking soda
  • ¾ tsp4 gBaking powder
  • ½ tsp3 gSalt
  • 1⅛ tsp3 gGround cinnamon

Steps

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with a parchment sling.
  2. Grate the zucchini and set it aside.
  3. Make the topping: in a small bowl, stir the granulated sugar with one third of the cinnamon to make cinnamon sugar. Set it aside with the sliced almonds.
  4. In a medium bowl, whisk the flour, baking soda, baking powder, salt and the remaining two thirds of the cinnamon.
  5. In a large bowl, whisk the almond butter, brown sugar and canola oil until smooth. Whisk in the eggs one at a time, then the milk and vanilla.
  6. Stir the zucchini into the almond butter mixture.
  7. Fold the flour mixture into the wet mixture until just a few dry streaks remain, then fold in the chocolate chips.
  8. Scrape the batter into the pan and smooth the top. Scatter the sliced almonds over it, then sprinkle evenly with the granulated sugar and cinnamon mixture.
  9. Bake 55 to 65 minutes, tenting with foil after 40 minutes if the almonds brown quickly, until a toothpick in the center comes out clean apart from melted chocolate.
  10. Cool in the pan on a rack for 15 minutes, lift out with the parchment and cool completely on the rack, about 1 hour, before cutting into 12 slices.
