  • ⅓ cup90 gAlmond butter, no salt addedwell stirred
  • ¼ cup80 gMaple syrup
  • ⅓ cup packed90 gBrown sugarpacked
  • 2 large100 gEggsroom temperature
  • 3 tbsp40 gCanola oilplus a little for the pan
  • 1¼ tsp5 gVanilla extract
  • 1¾ cups230 gAll-purpose flour
  • 1⅛ tsp5 gBaking soda
  • ½ tsp3 gSalt
  • ¾ tsp2 gGround cinnamon
  • ¾ cup120 gSemisweet chocolate chips
  • 3½ tbsp whole30 gAlmondsthinly sliced or roughly chopped

Steps

  1. Preheat the oven to 350°F (175°C). Lightly brush a 9x5-inch loaf pan with a little of the canola oil and line it with a parchment sling.
  2. In a medium bowl, whisk the flour, baking soda, salt and cinnamon together; set this dry mix aside.
  3. In a large bowl, mash the banana until mostly smooth. Whisk in the almond butter, maple syrup, brown sugar, egg, the remaining canola oil and the vanilla until glossy.
  4. Add the dry mix to the banana mixture and fold with a spatula just until no dry flour remains; a few lumps are fine.
  5. Toss the chocolate chips with a spoonful of the batter's dry streaks or a pinch of flour from the bowl, then fold them in.
  6. Scrape the batter into the pan, smooth the top and scatter the almonds evenly over it, pressing lightly so they stick.
  7. Bake 55 to 65 minutes, tenting with foil after 40 minutes if the almonds brown too fast, until a toothpick in the center comes out clean apart from melted chocolate.
  8. Cool in the pan 15 minutes, lift out by the parchment and cool on a rack at least 1 hour before cutting into 12 slices.

Food safety: Don't taste raw dough or batter: raw flour and raw eggs can carry germs.
