- 2 oz60 gPlain Greek yogurt, nonfat
- 1 tbsp6 gLemon zest
- 1 tbsp15 gLemon juice
- 1¼ tsp5 gVanilla extract
- 1¼ tsp6 gBaking powder
- ¾ tsp3 gBaking soda
- ½ tsp3 gSalt
- ¾ tsp2 gGround cinnamon
- 1¾ tsp8 gUnsalted buttersoftened, for the pan
Steps
- Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with the butter.
- Spread the walnuts and half of the almonds (the half for grinding) on a sheet and toast 7 to 8 minutes until fragrant; cool 5 minutes. Keep the other half of the almonds, sliced, raw for the topping.
- Grind the toasted almond half in a food processor until fine and sandy.
- In a medium bowl, whisk the flour, ground toasted almonds, baking powder, baking soda, salt and cinnamon.
- In a large bowl, whisk the eggs with all but 15 g of the sugar until pale, then whisk in the canola oil, Greek yogurt, lemon zest, lemon juice and vanilla.
- Stir the grated zucchini into the wet mixture, then fold in the flour mixture just until no dry streaks remain. Fold in the toasted walnuts.
- Scrape the batter into the pan and smooth the top. Scatter the sliced raw almonds over it and sprinkle with the remaining 15 g of sugar.
- Bake 55 to 65 minutes, tenting with foil after 40 minutes if the almonds brown fast, until a toothpick in the center comes out clean.
- Cool in the pan 15 minutes, then turn out onto a rack and cool completely, about 1 hour, before cutting into 12 slices.
