- 1 tbsp (15 ml)15 gOrange juice

Steps
- Dice the strawberries, pat them dry on paper towels and chill them in the freezer for 15 minutes while you prepare the rest, so they hold their shape.
- Heat the oven to 400°F (200°C) and line a baking sheet with parchment.
- In a large bowl, whisk the flour, the first portion of the sugar (65 g), the baking powder and the salt.
- Add the cold butter cubes and rub them into the flour mixture with your fingertips until pea-sized pieces remain.
- Toss the chilled strawberries and the chopped dates into the flour-butter mixture until coated.
- In a small bowl, whisk most of the cream (180 g), the egg, the orange juice and the vanilla.
- Pour the cream mixture over the dry ingredients and stir gently with a fork just until a shaggy dough forms.
- Turn the dough onto a floured surface, divide it in half and pat each half into a 7-inch round about 1 inch thick; cut each round into 6 wedges.
- Set the wedges on the baking sheet, brush the tops with the remaining cream (20 g) and sprinkle with the remaining sugar (15 g). Chill for 15 minutes.
- Bake 18–22 minutes, until golden and a toothpick in the center comes out clean.
- Cool on a rack for 10 minutes before serving.
