  • 1¾ cups150 gOld-fashioned rolled oats
  • 1¼ cups150 gAll-purpose flour
  • ⅔ cup150 gUnsalted buttermelted
  • ½ cup packed120 gBrown sugar
  • 3 tbsp40 gGranulated sugar
  • 2 tbsp16 gCornstarch
  • 1 tbsp15 gLemon juice
  • 1¼ tsp5 gVanilla extract
  • ½ tsp1 gGround cinnamon
  • ¼ tsp1 gBaking soda
  • ¼ tsp2 gSalt

Steps

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square pan with parchment, leaving an overhang.
  2. Melt the butter and let it cool slightly while you make the filling.
  3. In a bowl, stir the strawberries with the granulated sugar, cornstarch, lemon juice and vanilla to make the strawberry filling; set aside.
  4. In a second bowl, mix the oats, flour, brown sugar, cinnamon, baking soda and salt. Pour in the melted butter and stir until clumpy oat crumbs form.
  5. Press two-thirds of the oat crumbs firmly into the pan. Bake this crust for 15 minutes until lightly golden.
  6. Spread the strawberry filling over the hot crust, then scatter the remaining one-third of the oat crumbs on top, squeezing some into small clusters.
  7. Bake 35 to 40 minutes, until the top is golden and the filling bubbles thickly at the edges.
  8. Cool in the pan on a rack for at least 1 hour so the filling sets, then lift out by the parchment and cut into 12 bars.
