- ½ cup85 gGranulated sugardivided: 70 g for the dough, 15 g for the tops
- 1 tbsp14 gBaking powder
- ¾ tsp4 gSalt
- 1½ tsp3 gGround cardamom
- 1 tbsp6 gLemon zest
- ⅓ cup85 gUnsalted buttercold, cut into small cubes
- 1 cup sliced180 gStrawberriesdiced small and patted dry
- 1 cup (240 ml)250 gHeavy creamcold, divided: 230 g for the dough, 20 g for brushing
- 1¼ tsp5 gVanilla extract
Steps
- Dice the strawberries, pat them dry on paper towels, and chill them while you prepare the dough.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment.
- In a large bowl, whisk the flour, the dough portion of the sugar (70 g), the baking powder, the salt, the cardamom and the lemon zest.
- Cut the cold butter into the flour mixture with a pastry cutter or your fingertips until it looks like coarse crumbs with some pea-size pieces.
- Gently toss the chilled strawberries into the flour-butter mixture so they are coated.
- In a small cup, stir the vanilla into the dough portion of the heavy cream (230 g), then pour it over the flour mixture and fold with a spatula just until a shaggy dough forms.
- Turn the dough onto a floured counter, divide it in half, and pat each half into a 7-inch round about 1 inch thick; cut each round into 6 wedges.
- Set the wedges 2 inches apart on the baking sheet and chill for 15 minutes so the butter firms up.
- Brush the tops with the remaining heavy cream (20 g) and sprinkle with the remaining sugar (15 g).
- Bake for 18 to 22 minutes, until the tops and edges are golden and a toothpick in the center comes out clean.
- Cool on a rack for at least 10 minutes before serving.
