  • 2¼ tsp6 gGround cinnamon
  • 1¾ tsp3 gGround ginger
  • ¾ tsp1.5 gGround nutmeg
  • ¼ tsp0.5 gGround cloves
  • 2 tsp8 gVanilla extract

Steps

  1. Heat the oven to 350°F (175°C) and set out two 9-inch pie pans.
  2. Make the crust: in a bowl, stir together the flour, pecans, granulated sugar and half of the salt (keep the remaining half of the salt for the filling).
  3. Pour in the melted butter and stir until the crumbs clump when squeezed.
  4. Divide the crust mixture in half and press one half evenly over the bottom and up the sides of each pie pan, using a flat-bottomed cup to firm it.
  5. Bake the crusts for 12 to 15 minutes, until lightly golden at the edges, then set them on a rack while you make the filling. Keep the oven at 350°F (175°C).
  6. Make the filling: in a large bowl, whisk the pumpkin puree with the brown sugar, the remaining half of the salt, the cinnamon, ground ginger, nutmeg and cloves until smooth.
  7. Whisk in the eggs, then the milk, heavy cream and vanilla until the filling is even and glossy.
  8. Pour half of the filling into each warm crust.
  9. Bake for 45 to 55 minutes, until the edges are set, the center jiggles only slightly and a thermometer inserted near the center reads 160°F (71°C).
  10. Cool the pies on a rack for at least 2 hours, then cut each pie into 6 slices. Refrigerate leftovers.
