- 3 tbsp60 gMaple syrup
- 1¼ tsp5 gVanilla extract
- ½ cup80 gDry-roasted peanuts, unsaltedroughly chopped
- ⅔ cup chopped70 gWalnutsroughly chopped
- ½ tsp1 gGround cinnamon
Steps
- Heat the oven to 350°F (175°C) and line an 8-inch square pan with parchment, leaving an overhang.
- Melt the butter and let it cool a few minutes while you roughly chop the dry-roasted peanuts and the walnuts.
- In a large bowl, whisk the oats, flour, brown sugar, baking soda, salt and cinnamon, then stir in the melted butter until the mixture forms moist clumps.
- Divide the oat crumble: press two-thirds of it firmly into the pan for the base, and set the remaining one-third aside for the topping.
- Bake the base for 12 minutes, until just set and lightly golden at the edges.
- Meanwhile, in a medium bowl, stir the peanut butter, maple syrup and vanilla until smooth, then fold in half of the chopped dry-roasted peanuts and half of the chopped walnuts.
- Spread the peanut butter filling gently over the warm base.
- Toss the remaining half of the chopped dry-roasted peanuts and the remaining half of the chopped walnuts into the reserved crumble and scatter it evenly over the filling, pressing lightly.
- Bake 20 to 22 minutes, until the topping is golden brown and the edges are golden.
- Cool completely in the pan on a rack, about 1 hour, so the bars firm up, then lift out by the parchment and cut into 12 bars.
