- ½ cup45 gUnsweetened cocoa powder
- 2 large100 gEggsroom temperature
- 1¼ tsp5 gVanilla extract
- ¼ tsp1 gBaking soda
- ½ tsp3 gSalt
Steps
- Preheat the oven to 350°F (175°C) and line an 8-inch square pan with parchment, leaving overhang.
- Make the oat-peanut mixture: in a bowl, combine the oats, the chopped peanuts, the brown sugar, half of the flour, the baking soda and one-third of the salt. Stir in half of the melted butter until crumbly.
- Press two-thirds of the oat-peanut mixture firmly into the pan; set the remaining third aside for the topping. Bake the base for 10 minutes.
- Meanwhile make the brownie batter: in a second bowl, whisk the remaining half of the melted butter with the granulated sugar and the unsweetened cocoa powder until smooth and glossy.
- Whisk the eggs into the cocoa mixture one at a time, then whisk in the vanilla.
- Fold the remaining half of the flour and the remaining two-thirds of the salt into the cocoa mixture just until no streaks remain.
- Spread the brownie batter over the hot base, then scatter the reserved oat-peanut crumble evenly on top.
- Bake 25 to 28 minutes, until the crumble is golden and a toothpick in the center comes out with moist crumbs but no wet batter.
- Cool in the pan on a rack for at least 1 hour, then lift out with the parchment and cut into 12 bars.
