  • ⅔ cup80 gWhole wheat flour
  • 2⅛ tsp10 gBaking powder
  • ¾ tsp3 gBaking soda
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper
  • 1 tbsp4 gDried rosemarycrumbled, divided
  • 2 tsp2 gDried thyme
  • ¼ cup chopped15 gFresh parsleyfinely chopped
  • 3 cloves9 gGarlicminced
  • ¾ cup200 gPart-skim ricotta
  • ¾ cup (180 ml)180 gMilk, 2%
  • 2 large100 gEggs
  • ⅓ cup75 gOlive oildivided
  • 1 tbsp15 gLemon juice

Steps

  1. Preheat the oven to 350°F (175°C). Brush a 9x5-inch loaf pan with about 5 g of the olive oil (a teaspoon) and set aside; keep the remaining olive oil for the batter.
  2. Prepare the herbs first: crumble the rosemary between your fingers and set aside about one quarter of it for the top; finely chop the parsley and mince the garlic.
  3. In a large bowl, whisk the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, black pepper, the thyme and the remaining three quarters of the rosemary.
  4. In a second bowl, whisk the egg, ricotta, milk, the remaining olive oil and the lemon juice until smooth, then stir in the parsley and garlic.
  5. Pour the wet mixture into the dry mixture and fold with a spatula just until no dry streaks remain; the batter will be thick and slightly lumpy.
  6. Scrape the batter into the prepared pan, smooth the top and sprinkle with the reserved quarter of the rosemary.
  7. Bake 50 to 55 minutes, until the top is deep golden and a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then turn out onto a rack and cool at least 1 hour before cutting into 12 slices.
