  • ½ cup85 gGranulated sugardivided: 70 g for the dough, 15 g for topping
  • 1 tbsp14 gBaking powder
  • ½ tsp3 gSalt
  • ⅓ cup90 gUnsalted buttercold, cut into small cubes
  • ½ cup110 gCream cheesecold, cut into small pieces
  • 1⅓ cups170 gRaspberriesfrozen until firm, about 20 minutes
  • ¾ cup (180 ml)170 gHeavy creamcold, divided: 150 g for the dough, 20 g for brushing
  • 1 large50 gEggs
  • 1¼ tsp5 gVanilla extract
  • 1 tbsp6 gLemon zestfinely grated

Steps

  1. Spread the raspberries on a plate and freeze for 20 minutes so they hold their shape. Line a baking sheet with parchment.
  2. Preheat the oven to 400°F (200°C).
  3. In a large bowl, whisk the flour, 70 g of the sugar (the dough portion), the baking powder, the salt and the lemon zest.
  4. Add the cold butter and cream cheese and rub them in with your fingertips or a pastry cutter until the pieces are pea-sized.
  5. In a small bowl, whisk 150 g of the heavy cream (the dough portion) with the egg and vanilla to make the wet mixture.
  6. Pour the wet mixture into the flour mixture and stir with a fork until shaggy. Gently fold in the frozen raspberries without crushing them.
  7. Turn the dough onto a floured counter, pat into two 6-inch rounds about 1 inch thick, and cut each into 6 wedges, for 12 scones.
  8. Place the wedges on the baking sheet and chill for 15 minutes so the butter stays cold.
  9. Brush the tops with the remaining 20 g of heavy cream and sprinkle with the remaining 15 g of sugar.
  10. Bake 18 to 22 minutes, until golden and a toothpick in the center comes out clean.
  11. Cool on a rack for at least 10 minutes before serving.
