Steps

  1. Preheat the oven to 375°F (190°C). Brush a 9x5-inch loaf pan with about 1 teaspoon of the canola oil and line the bottom with parchment.
  2. Prepare the add-ins first: seed and finely chop the jalapeño, drain the green chiles well, crumble the queso fresco and chop the cilantro. Set aside about a quarter of the queso fresco for the top.
  3. In a large bowl, whisk the cornmeal, flour, sugar, baking powder, baking soda, salt and cumin.
  4. In a second bowl, whisk the sour cream, whole milk, eggs, the remaining canola oil and the lime juice until smooth.
  5. Pour the wet mixture into the dry mixture and stir just until no dry streaks remain; a few lumps are fine.
  6. Fold in the chopped jalapeño, the green chiles, the cilantro and the remaining three-quarters of the queso fresco.
  7. Scrape the batter into the pan, smooth the top and scatter the reserved quarter of the queso fresco over it.
  8. Bake 50 to 55 minutes, until the top is golden and a toothpick in the center comes out clean.
  9. Cool in the pan 10 minutes, then lift out and cool on a rack at least 20 minutes before cutting into 12 slices.
