Steps
- Preheat the oven to 350°F (175°C). Line an 8-inch square pan with parchment, leaving an overhang on two sides.
- Spread the pecans on a small baking sheet and toast in the oven for 6 to 8 minutes until fragrant, then let cool.
- In a large bowl, whisk the pumpkin, the maple syrup, the brown sugar, the almond butter, the egg and the vanilla until smooth.
- In a medium bowl, stir together the oats, the cinnamon, the nutmeg, the baking powder and the salt.
- Stir the oat mixture into the pumpkin mixture until evenly combined, then let it stand for 5 minutes so the oats soften slightly.
- Fold in the toasted pecans and the chocolate chips, then spread the batter evenly in the lined pan and smooth the top.
- Bake for 30 to 35 minutes, until the top is set and golden at the edges and a toothpick inserted in the center comes out clean.
- Cool in the pan on a rack for at least 1 hour so the bars firm up, then lift out by the parchment and cut into 12 bars.
