- ⅓ cup packed80 gBrown sugarpacked
- ⅓ cup90 gCanola oil
- 125 gEggsdivided: 2 large for the batter, half of a third large egg for the swirl
- ½ cup115 gCream cheesesoftened
- ¾ cup120 gSemisweet chocolate chips
- 1⅛ tsp5 gBaking soda
- ¾ tsp3 gBaking powder
- ½ tsp3 gSalt
- 2 tsp5 gGround cinnamon
- 1⅛ tsp2 gGround ginger
- ½ tsp1 gGround nutmeg
- 1¼ tsp5 gVanilla extract
- 1 tsp5 gUnsalted buttersoftened, for greasing the pan
Steps
- Set the cream cheese out to soften. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan with the butter.
- In a medium bowl, whisk the flour, baking soda, baking powder, salt, cinnamon, ground ginger and nutmeg.
- In a large bowl, whisk the pumpkin, brown sugar, 110 g of the granulated sugar, the canola oil, the vanilla and 2 of the eggs until smooth.
- Make the swirl: beat the third egg in a small cup. In another small bowl, beat the cream cheese with the remaining 20 g of granulated sugar and half of the beaten egg until smooth; save the rest of the egg for another use.
- Stir the flour mixture into the pumpkin mixture just until no dry flour remains, then fold in the chocolate chips.
- Spread half the batter in the pan, spoon the cream cheese mixture over it in a line, then top with the remaining half of the batter. Run a knife through in a few S-shapes to swirl.
- Bake 60 to 70 minutes, until a toothpick in the center comes out clean of batter (a little melted chocolate is fine).
- Cool in the pan 15 minutes, then turn out and cool completely on a rack, about 1 hour, before cutting into 12 slices.
