  • 4 oz120 gPlain Greek yogurt, nonfatroom temperature
  • ¾ cup200 gPumpkin puree, canned
  • ½ cup90 gGranulated sugar
  • 1½ tbsp30 gMaple syrup
  • 2 large100 gEggsroom temperature, beaten
  • 1 tbsp10 gCornstarch
  • 1¼ tsp5 gVanilla extract
  • 1½ tsp4 gGround cinnamon
  • ¼ tsp0.5 gGround nutmeg
  • ⅛ tsp0.3 gGround cloves

Steps

  1. Heat the oven to 350°F (175°C). Line an 8-inch square pan with parchment, leaving overhang on two sides.
  2. Stir together the flour, oats, pecans, brown sugar, half the salt and a pinch of the cinnamon. Pour in the melted butter and mix until it looks like damp sand.
  3. Press the crumbs firmly and evenly into the pan. Bake 15 minutes until lightly golden, then set aside while you make the filling. Lower the oven to 325°F (165°C).
  4. Beat the cream cheese until smooth, then beat in the sugar and maple syrup. Add the Greek yogurt and pumpkin and beat until no lumps remain.
  5. Beat in the eggs, vanilla, cornstarch, remaining cinnamon, nutmeg, cloves and remaining salt on low speed just until smooth; don't overbeat.
  6. Pour the filling over the warm crust and smooth the top. Bake 35 to 40 minutes, until the edges are set and the center jiggles only slightly; the center should reach 160°F (71°C).
  7. Cool in the pan on a rack for 1 hour, then cover and chill at least 3 hours until firm.
  8. Lift out by the parchment and cut into 16 bars with a sharp knife wiped clean between cuts. Keep refrigerated.
