- ¾ cup150 gGranulated sugar
- 3½ tbsp packed50 gBrown sugar
- 2 large100 gEggsroom temperature
- 1¼ tsp5 gVanilla extract
- ½ cup50 gUnsweetened cocoa powder
- ½ cup70 gAll-purpose flour
- ¼ tsp2 gSalt
- ½ cup85 gSemisweet chocolate chips
- ½ cup130 gPeanut butter, no salt addedstirred smooth
- 2½ tbsp20 gPowdered sugar
- ¼ cup40 gDry-roasted peanuts, unsaltedroughly chopped
- ½ tsp2 gCanola oil
Steps
- Heat the oven to 350°F (175°C). Brush an 8-inch square pan with the canola oil and line it with parchment, leaving an overhang.
- Melt the butter and let it cool for 5 minutes.
- Make the peanut butter swirl: in a small bowl, stir the peanut butter with the powdered sugar until smooth. If it is stiff, warm it for 10 seconds in the microwave. Set aside.
- Make the brownie batter: in a large bowl, whisk the melted butter with the granulated sugar and brown sugar. Whisk in the eggs and vanilla until glossy, about 1 minute.
- Sift the unsweetened cocoa powder and flour over the bowl, add the salt, and fold until just combined. Fold in the chocolate chips.
- Spread the brownie batter in the pan. Drop spoonfuls of the peanut butter swirl over the top, then drag a butter knife through to marble it.
- Scatter the chopped dry-roasted peanuts over the top and press them in lightly.
- Bake for 25 to 28 minutes, until the edges are set and a toothpick in the center comes out clean or with a few moist crumbs, not wet batter.
- Cool in the pan on a rack for at least 1 hour, then lift out with the parchment and cut into 12 bars.
Food safety: Don't taste raw dough or batter: raw flour and raw eggs can carry germs.
