- 2 large100 gEggsroom temperature
- ¼ cup57 gUnsalted buttermelted and slightly cooled
- ¼ cup60 gPlain yogurt, low-fat
- 1¼ tsp5 gVanilla extract
- 1⅛ tsp5 gBaking soda
- ½ tsp3 gSalt
- ⅔ cup110 gSemisweet chocolate chips
- ½ cup70 gDry-roasted peanuts, unsaltedroughly chopped
Steps
- Preheat the oven to 350°F (175°C). Brush a 9x5-inch loaf pan with a little of the melted butter and line it with a parchment sling.
- Roughly chop the dry-roasted peanuts and divide them: set aside one third of the chopped dry-roasted peanuts for the topping and keep the remaining two thirds for the batter.
- In a medium bowl, whisk the flour, baking soda and salt.
- In a large bowl, mash the banana, then whisk in the peanut butter, the rest of the melted butter, the brown sugar, the egg, the yogurt and the vanilla until smooth.
- Fold the flour mixture into the banana mixture just until no dry streaks remain.
- Fold in the chocolate chips and the two thirds of the chopped dry-roasted peanuts kept for the batter.
- Scrape the batter into the pan, smooth the top and scatter over the remaining third of the chopped dry-roasted peanuts, pressing them in lightly.
- Bake 55 to 65 minutes, tenting with foil after 40 minutes if the top browns fast, until a toothpick in the center comes out clean (a smear of melted chocolate is fine).
- Cool in the pan 15 minutes, then lift onto a rack and cool at least 45 minutes before cutting into 12 slices.
