- 1⅛ tsp5 gBaking soda
- ¾ tsp3 gBaking powder
- ½ tsp3 gSalt
- 1⅛ tsp3 gGround cinnamondivided
- 2 tsp8 gVanilla extract
- ¾ tsp3 gCanola oilfor greasing
Steps
- Preheat the oven to 350°F (175°C). Brush a 9x5-inch loaf pan with the canola oil and line it with a strip of parchment.
- Make the streusel first: in a small bowl, rub the cold cubed half of the butter into one-third of the brown sugar, half of the cinnamon and 20 g of the flour until crumbly, then stir in the pecans. Chill while you make the batter.
- In a medium bowl, whisk the remaining flour with the baking soda, baking powder, salt and the remaining half of the cinnamon.
- In a large bowl, whisk the mashed banana, peanut butter, the remaining two-thirds of the brown sugar, the melted half of the butter, the egg, yogurt and vanilla until smooth.
- Fold the flour mixture into the banana mixture just until no dry streaks remain, then fold in the walnuts.
- Scrape the batter into the pan, smooth the top and scatter the pecan streusel evenly over it.
- Bake 55 to 65 minutes, until a toothpick in the center comes out clean; tent loosely with foil after 40 minutes if the streusel browns quickly.
- Cool in the pan 15 minutes, lift out onto a rack and cool at least 1 hour before cutting into 12 slices.
