  • 2¼ tsp6 gGround cinnamon
  • 2 tbsp12 gLemon zest
  • ½ cup115 gUnsalted buttercold, cut into small cubes
  • ⅔ cup150 gPlain yogurt, low-fatcold
  • ⅓ cup (80 ml)80 gOrange juicedivided
  • 1 large50 gEggs
  • 1 tsp4 gVanilla extract
  • 1 tbsp (15 ml)15 gMilk, 2%
  • ¾ cup100 gPowdered sugar

Steps

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment.
  2. In a large bowl, whisk the flour, granulated sugar, baking powder, baking soda, salt and cinnamon. Rub in the lemon zest with your fingers until fragrant.
  3. Add the cold butter and cut it in with a pastry cutter or your fingertips until the largest pieces are pea-sized.
  4. In a separate bowl, whisk the yogurt, three quarters of the orange juice, the egg and the vanilla.
  5. Pour the yogurt mixture into the flour mixture and stir with a fork just until a shaggy dough forms.
  6. Turn the dough onto a lightly floured surface, pat into a rectangle, fold in thirds, then pat into two 6-inch rounds about 1 inch thick.
  7. Cut each round into 6 wedges and set them on the baking sheet with space between. Chill for 15 minutes so the butter firms up.
  8. Brush the tops with the milk and bake 16 to 18 minutes, until golden and a toothpick in the center comes out clean.
  9. Cool the scones on a rack for 15 minutes.
  10. Whisk the powdered sugar with the remaining quarter of the orange juice until smooth, then drizzle the glaze over the cooled scones and let it set for 5 minutes.
