- 1 whole330 gMangothinly sliced
- 2 medium260 gOrangecut into segments, membranes removed
Steps
- Preheat the oven to 350°F (175°C) and set out two 9-inch tart pans with removable bottoms.
- Make the crust: in a bowl, stir together the flour, the shredded coconut, one third of the sugar and the salt.
- Pour the melted butter over the flour mixture and stir until it looks like damp sand that holds together when squeezed.
- Divide the crust mixture in half and press each half firmly and evenly over the bottom and up the sides of a tart pan. Prick the bottoms with a fork and chill for 15 minutes.
- Bake the crusts for 18 to 20 minutes, until golden at the edges. Set them on a rack and lower the oven to 325°F (165°C).
- Make the filling while the crusts bake: whisk the eggs with the remaining two thirds of the sugar until smooth, then whisk in the lime juice, the lemon zest and the heavy cream.
- Divide the lime filling evenly between the warm crusts.
- Bake for 20 to 25 minutes, until the edges are set and the center has a slight wobble and reads 160°F (71°C).
- Cool the tarts on a rack for 1 hour, then chill for at least 2 hours until firm.
- Just before serving, arrange the mango slices and orange segments over the tarts. Cut each tart into 6 slices.
