  • 1 container (6 oz)170 gPlain Greek yogurt, nonfat
  • ½ cup (120 ml)120 gMilk, 2%

  • 3 whole42 gJalapeñoseeded and finely diced
  • ⅓ cup chopped20 gFresh parsleyfinely chopped
  • 1 cup sprigs10 gFresh dillfinely chopped
  • 2 medium30 gGreen onionsthinly sliced

Steps

  1. Preheat the oven to 350°F (175°C). Brush a 9x5-inch loaf pan with about 1 teaspoon of the olive oil; save the rest of the olive oil for the batter.
  2. Prepare the fold-ins first: seed and finely dice the jalapeño, chop the parsley and dill, slice the green onion and crumble the feta. Set aside about 2 tablespoons of the feta for the top; the rest goes into the batter.
  3. In a large bowl, whisk the flour, baking powder, baking soda, salt, black pepper and oregano.
  4. In a second bowl, whisk the egg, Greek yogurt, milk and the remaining olive oil until smooth.
  5. Pour the wet mixture into the dry mixture and stir with a spatula until just a few streaks of flour remain.
  6. Fold in the diced jalapeño, parsley, dill, green onion and the larger portion of feta until just combined; the batter will be thick.
  7. Scrape the batter into the pan, smooth the top and scatter the reserved feta over it.
  8. Bake 50 to 55 minutes, until golden and a toothpick in the center comes out clean.
  9. Cool in the pan 10 minutes, then turn out onto a rack and cool at least 20 minutes more before cutting into 12 slices.
