Jalapeño Dill Cottage Cheese Loaf

Ingredients

  • 2 cups260 gAll-purpose flour
  • 2½ tsp12 gBaking powder
  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper
  • 1 tsp3 gGarlic powder
  • 1 cup226 gCottage cheese, 2%
  • 2 large100 gEggsroom temperature
  • ½ cup (120 ml)120 gMilk, 2%
  • ¼ cup60 gUnsalted buttermelted and slightly cooled, plus a little extra for the pan
  • 3 whole42 gJalapeñoseeded and finely diced
  • 1⅔ cups sprigs15 gFresh dillfinely chopped
  • 3 oz80 gPart-skim mozzarellashredded, divided

Steps

  1. Preheat the oven to 350°F (175°C). Brush a 9x5-inch loaf pan with a little of the melted butter and line it with a strip of parchment.
  2. Prepare the add-ins first: seed and finely dice the jalapeño, chop the dill, and shred the mozzarella. Set aside one quarter of the mozzarella for the top; the remaining three quarters go into the batter.
  3. In a large bowl, whisk the flour, baking powder, salt, black pepper and garlic powder.
  4. In a second bowl, whisk the eggs, cottage cheese and milk, then whisk in the rest of the melted butter.
  5. Toss the jalapeño, dill and the three-quarter portion of mozzarella into the flour mixture so they are coated.
  6. Pour the cottage cheese mixture into the flour mixture and fold gently with a spatula just until no dry flour remains; the batter will be thick and a little lumpy.
  7. Scrape the batter into the pan, smooth the top, and scatter the reserved quarter of mozzarella over it.
  8. Bake 50 to 55 minutes, until golden and a toothpick in the center comes out clean. Tent with foil after 35 minutes if the cheese browns too fast.
  9. Cool in the pan for 10 minutes, then lift the loaf out onto a rack and cool at least 45 minutes before cutting into 12 slices.
