  • 6 cloves18 gGarlicminced (about 6 cloves)
  • 1½ cups180 gYellow cornmeal, whole-grain
  • 1¼ cups150 gAll-purpose flour
  • 2 tbsp25 gGranulated sugar
  • 1¾ tsp8 gBaking powder
  • ¾ tsp3 gBaking soda
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper
  • 2 tsp2 gDried thyme
  • 1¼ cups (300 ml)300 gButtermilk, low-fatroom temperature
  • 2 large100 gEggsroom temperature
  • ½ cup chopped30 gFresh parsleyfinely chopped
  • 1⅛ tsp5 gCanola oilfor greasing the pan

Steps

  1. Preheat the oven to 375°F (190°C). Grease a 9x5-inch loaf pan with the canola oil.
  2. Prepare the herbs and garlic first: finely chop the parsley and mince the garlic.
  3. In a small skillet over medium-low heat, melt 15 g of the butter, add the garlic and cook 1–2 minutes until soft and fragrant but not browned. Scrape into a large bowl and let cool.
  4. In the same skillet, melt the remaining 70 g of butter over medium heat, swirling, until it smells nutty and the solids turn golden brown, 3–4 minutes. Pour it into a small bowl and cool 5 minutes.
  5. In a medium bowl, whisk the cornmeal, flour, sugar, baking powder, baking soda, salt, black pepper and thyme.
  6. Into the bowl with the garlic, whisk the buttermilk and eggs, then whisk in the cooled brown butter.
  7. Add the dry mixture to the wet mixture and fold just until no dry flour remains. Fold in the parsley; a few lumps are fine.
  8. Scrape the batter into the pan and smooth the top. Bake 40–45 minutes, until the top is golden and a toothpick in the center comes out clean.
  9. Cool in the pan 10 minutes, then turn out onto a rack and cool at least 30 minutes before cutting into 12 slices.
