  • 2⅓ cups290 gAll-purpose flour

  • ½ tsp2 gBaking soda
  • 2 tsp2 gDried oregano
  • ½ tsp1 gBlack pepper
  • ¼ tsp0.5 gCrushed red pepper

  • ¾ cup200 gPlain yogurt, low-fat
  • ⅓ cup (80 ml)100 gWhole milk

Steps

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with about 5 g of the olive oil and line it with parchment.
  2. Heat another 10 g of the olive oil in a skillet over medium heat. Cook the bell pepper for 5 minutes until soft, add the garlic for 30 seconds, then stir in the spinach until wilted and any liquid cooks off. Spread on a plate to cool for 10 minutes.
  3. In a large bowl, whisk the flour, baking powder, baking soda, oregano, black pepper and red pepper flakes.
  4. In another bowl, whisk the eggs, yogurt, milk and the remaining olive oil until smooth.
  5. Pour the wet mixture into the flour mixture and fold just until no dry streaks remain. Fold in the cooled pepper-spinach mixture and about three-quarters of the feta.
  6. Scrape the batter into the pan, smooth the top and scatter the remaining quarter of the feta over it.
  7. Bake 55 to 60 minutes, until the top is deep golden and a toothpick in the center comes out clean.
  8. Cool in the pan 10 minutes, then lift out and cool on a rack at least 45 minutes before slicing into 12 slices.
