- ½ tsp2 gBaking soda
- ½ tsp3 gSalt
- ½ tsp1 gBlack pepper
- ¾ tsp2 gPaprika (sweet or smoked)
- 1¾ cups shredded200 gCheddar cheeseshredded
- 1⅔ cups florets150 gBroccolifinely chopped
- ½ cup chopped80 gYellow onionfinely diced
- 2 large100 gEggs
- 1 cup (240 ml)240 gMilk, 2%
- ⅓ cup80 gSour cream
- ⅓ cup75 gUnsalted buttermelted and cooled, plus 5 g softened for the pan
- 1 tbsp15 gYellow mustard
Steps
- Preheat the oven to 400°F (200°C). Brush a 12-cup muffin pan with a little of the softened butter (about 5 g of the butter total); melt the rest of the butter and let it cool.
- Set aside one quarter of the cheddar for the tops; the remaining three quarters goes into the batter.
- Microwave or steam the broccoli with the onion for 2 to 3 minutes until just tender, then spread them on a plate to cool and pat dry.
- In a large bowl, whisk the flour, baking powder, baking soda, salt, black pepper and paprika.
- In another bowl, whisk the egg, milk, sour cream, melted butter and mustard until smooth.
- Toss the cooled broccoli, onion and the three quarters of the cheddar into the flour mixture so they are coated.
- Pour the egg mixture into the flour mixture and fold gently just until no dry flour remains; a lumpy batter is fine.
- Divide the batter among the 12 cups and sprinkle the reserved quarter of the cheddar over the tops.
- Bake 20 to 22 minutes, until golden and a toothpick in the center comes out clean.
- Cool in the pan 5 minutes, then move the muffins to a rack and cool at least 10 minutes more before serving.
