- 2 cups240 gAll-purpose flour
- ½ cup100 gUnsalted butter
- ½ cup packed120 gBrown sugar
- 2½ tsp10 gGranulated sugar
- 2 large100 gEggsroom temperature
- ¼ cup60 gSour cream
- 2 tsp8 gVanilla extract
- 1⅛ tsp5 gBaking soda
- ¾ tsp4 gSalt
- ¾ tsp2 gGround cinnamon
- ¾ cup140 gSemisweet chocolate chips
- ¾ tsp3 gCanola oilfor greasing the pan
Steps
- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with the canola oil and line it with a parchment sling.
- Melt the butter in a small saucepan over medium heat, swirling, until it foams and smells nutty with golden-brown specks, 4–5 minutes. Pour it into a large bowl and cool 10 minutes.
- In a medium bowl, whisk the flour, baking soda, salt and cinnamon; this is the dry mix.
- Whisk the brown sugar into the browned butter, then whisk in the eggs one at a time, followed by the sour cream and vanilla.
- Stir the mashed banana into the butter mixture until combined.
- Fold the dry mix into the banana mixture with a spatula until just a few streaks of flour remain.
- Set aside a quarter of the chocolate chips. Fold the remaining three-quarters of the chocolate chips into the batter.
- Scrape the batter into the pan and smooth the top. Scatter the reserved quarter of the chocolate chips over it, then sprinkle the granulated sugar evenly over the top for a crackly crust.
- Bake 55–65 minutes, tenting with foil after 40 minutes if browning fast, until a toothpick in the center comes out clean apart from melted chocolate.
- Cool in the pan 15 minutes, lift out by the parchment and cool on a rack at least 45 minutes before cutting into 12 slices.
