- ¼ cup packed60 gBrown sugarpacked
- 3 tbsp45 gUnsalted buttermelted, plus a little extra for greasing
- 1 large50 gEggsroom temperature
- ⅓ cup40 gAll-purpose flour
- 1¼ tsp5 gVanilla extract
- ¾ tsp2 gGround cinnamon
- ½ tsp2 gBaking soda
- ¼ tsp2 gSalt
Steps
- Preheat the oven to 350°F (175°C). Line an 8-inch square pan with parchment, leaving an overhang, and lightly grease the parchment with a little of the butter.
- Spread the oats and the almonds on a baking sheet and toast for 8 minutes, stirring once, until fragrant. Set aside about one quarter of the toasted almonds for the topping; the remaining three quarters go into the batter.
- Melt the butter. In a large bowl, whisk the melted butter with the almond butter, honey and brown sugar until smooth.
- Whisk in the egg and the vanilla until glossy.
- In a separate bowl, stir together the flour, cinnamon, baking soda and salt.
- Add the flour mixture to the almond butter mixture, then fold in the toasted oats and the three quarters of the almonds set aside for the batter until evenly coated.
- Press the batter firmly and evenly into the prepared pan, then scatter the reserved quarter of the almonds over the top and press them in lightly.
- Bake for 20 to 24 minutes, until the edges are golden and a toothpick in the center comes out clean.
- Cool in the pan on a rack for at least 40 minutes so the bars set, then lift out by the parchment and cut into 12 bars.
