Steps
- Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan with a little of the butter (taken from the first 15 g portion below).

- In the same skillet, melt the remaining 55 g of butter over low heat, add the garlic and rosemary and warm 1 minute until fragrant; remove from heat and let cool slightly.
- In a large bowl, whisk the flour, cornmeal, baking powder, baking soda, salt, black pepper and sugar.
- In a second bowl, whisk the egg and kefir, then whisk in the cooled rosemary-garlic butter.
- Pour the kefir mixture into the flour mixture and stir just until no dry streaks remain. Fold in the cheddar cubes and three-quarters of the cooled onion.
- Scrape the batter into the pan, smooth the top and scatter the remaining onion over it.
- Bake 50 to 55 minutes, until deep golden and a toothpick in the center comes out clean (aside from melted cheese).
- Cool in the pan 10 minutes, then turn out onto a rack and cool at least 30 minutes before cutting into 12 slices.
