Green Onion Cream Cheese Pepper Drop Biscuits

Ingredients

  • 2½ tsp12 gBaking powder
  • ½ tsp2 gBaking soda
  • ¾ tsp4 gSalt
  • 1¾ tsp4 gBlack peppercoarsely cracked
  • ½ cup100 gUnsalted buttercold, cut into small cubes
  • ½ cup115 gCream cheesecold, cut into small cubes
  • 3 medium45 gGreen onionsthinly sliced
  • 1 cup (240 ml)260 gButtermilk, low-fatcold
  • 1½ tbsp (20 ml)20 gHeavy cream

Steps

  1. Heat the oven to 450°F (230°C) and line a baking sheet with parchment.
  2. Cube the cold butter and cold cream cheese and keep them in the fridge while you slice the green onion and crack the black pepper.
  3. In a large bowl, whisk the flour, baking powder, baking soda, salt and black pepper.
  4. Add the cold butter and rub it into the flour mixture with your fingertips or a pastry cutter until the pieces are pea-sized.
  5. Add the cold cream cheese cubes and the green onion and toss gently so the cream cheese stays in small chunks.
  6. Pour in the cold buttermilk and stir with a fork just until a shaggy, sticky dough forms; a few dry streaks are fine.
  7. Drop the dough in 12 even mounds, about 2 inches apart, onto the baking sheet.
  8. Brush the tops of the biscuits with the heavy cream.
  9. Bake 13 to 16 minutes, until the tops and bottoms are deep golden and a toothpick in the center comes out clean.
  10. Cool on a rack for 10 minutes before serving warm.
