- ½ tsp2 gBaking soda
- ¾ tsp5 gSalt
- 1¼ tsp3 gPaprika (sweet or smoked)smoked
- ½ tsp1 gBlack pepper

- 1¼ cups shredded140 gCheddar cheesesharp, coarsely shredded and chilled
- 3 whole42 gJalapeñoseeded and finely diced
- 1 cup (240 ml)250 gButtermilk, low-fatcold
- 1 tbsp (15 ml)15 gWhole milk
Steps
- Cube the butter and shred the cheddar, then chill both in the freezer for 15 minutes while you dice the jalapeño.
- Preheat the oven to 450°F (230°C) and line a baking sheet with parchment.
- In a large bowl, whisk the flour, baking powder, baking soda, salt, smoked paprika and black pepper.
- Cut the cold butter into the flour mixture with a pastry cutter or your fingertips until the pieces are the size of peas, with some larger flakes.
- Toss in the cheddar and jalapeño until coated with flour.
- Pour in the cold buttermilk and stir with a fork just until a shaggy dough forms.
- Turn the dough onto a floured counter and pat into a rectangle about 3/4 inch thick. Fold it in thirds like a letter, turn it a quarter turn, and pat out again; repeat for 3 folds in all to build layers.
- Pat the dough to 1 inch thick and cut 12 biscuits with a floured 2 1/2-inch cutter, pressing straight down without twisting; gently re-pat scraps once to cut the last biscuits.
- Set the biscuits close together on the baking sheet and chill for 10 minutes so the butter firms up.
- Brush the tops with the whole milk and bake 14 to 17 minutes, until tall and deep golden on top and bottom.
- Cool on a rack for 5 minutes before serving warm.
