Steps
- Heat the oven to 450°F (230°C) and line a large baking sheet with parchment.
- In a large bowl, whisk the flour, cornmeal, baking powder, baking soda, sugar, salt, garlic powder and black pepper.
- Add the cold butter and rub it in with your fingertips or a pastry cutter until the largest pieces are the size of peas.
- Set aside a small handful (about one fifth) of the cheddar for the tops, then toss the remaining four fifths of the cheddar into the flour mixture.
- In a measuring cup, whisk the buttermilk with the sour cream until smooth.
- Pour the buttermilk mixture into the flour mixture and stir with a spatula just until no dry flour remains; the dough should be thick, shaggy and sticky.
- Drop the dough into 12 even mounds, about 2 inches apart, on the baking sheet using a large scoop or two spoons.
- Sprinkle the reserved cheddar over the tops of the mounds.
- Bake 13 to 16 minutes, until the edges and cheese are deep golden and a toothpick in the center of a biscuit comes out clean.
- Cool on the sheet for 5 minutes, then move to a rack and serve warm.
